This pudding is just as pretty to look at as it is to eat – and on top of that it’s actually healthy! Even if it’s meant to be a dessert, you can also enjoy it for breakfast or a midday snack. 😉
Chia pudding with mango
4 portions
- 1 3/4 frozen mango
- 1/2 cup water
- 1 3/4 cup coconut milk
- 4 dates, pitted
- 1/2 cup chia seeds
- seeds from a vanilla pod
Garnish:
- 4 tbsp slivered almonds
- mint leaves
1. Mix the mango och half the water to a thick sauce in a food processor, then gradually add more water. The sauce should be thick but not too thick. Pour it in four glasses half way up and place in the freezer while you prepare the chia layer.
2. Mix coconut milk and dates in a food processor. Place the mixture in a bowl and add chia seeds and vanilla. Stir and leave for 15 minutes to thicken into a pudding consistency.
3. Top the half frozen mango with the chia pudding and place in the fridge for about 1-2 hours for best flavour. Garnish with almonds and mint and serve.
