With a nutty base and a coating of coconut chocolate, these raw brownies are addictive! The secret is the vanilla extract and salt, which enhance the sweet chocolate flavour.
Nutty Raw Brownies

Base:
- 1 cup walnuts
- 1/2 cup almonds
- 1/2 cup cacao powder
- 1 pinch salt
- 1 cup pitted dates
Chocolate layer:
- 1/2 cup coconut oil
- 1/2 cup cacao powder
- 1/4 cup agave syrup
- 1 pinch salt
- 1/4 tsp vanilla extract
1. Mix walnuts and almonds in a food processor. Add cacao powder, salt and dates, and blend to a sticky slightly crumbly mixture. Add more dates if the mixture isn’t sticky enough.
2. Cover a brownie pan with a baking sheet or plastic wrap and press the mixture firmly to an even layer.
3. Melt coconut oil and combine with the remaining ingredients for the top layer in a bowl. Stir to a smooth mixture and pour on top of the base layer, use a spatula to make an even layer. Place in the freezer for about 1 hour until the chocolate layer is firm. Cut into slices with a slightly warm knife, and serve!
