A vegan version of Poke bowl

Poke is a popular dish in USA that has finally made its way to Europe! Traditionally it’s made with raw marinated fish, but there are plenty of vegan versions to try out, like tofu, kidney beans, or our favourite: marinated polka beets!

Polka beet Poke

4 portioner

  • rice for 4 ppl
  • ca 600 g (5 dl) diced polka beets (or red/yellow beetroot)

Sauce:

  • 1 tbsp ginger
  • 2 spring onions
  • 3 tbsp Japanese soy sauce
  • 1 tbsp sugar
  • 1 tbsp sesame oil

Till servering:

  • a dash of lime juice
  • sesame seeds, to taste
  • Japanese soy sauce, to taste
  • fresh veggies (e.g avocado, carrots, edamame beans)

Cook the rice according to the instructions on the package. Bring a pot with water to a boil, peel the beets and cook them until soft for about 25 minutes.

Prepare the sauce. Grate ginger, slice spring onions and place in a bowl. Add soy sauce, sugar and sesame oil and mix until the sugar is dissolved.

Rinse the beets in cold water and then combine them with the sauce. Serve in bowls on top of rice, add a dash of lime juice and garnish with spring onions and sesame seeds. Perhaps serve with some fresh veggies.
